Some folks might call these peanut butter oatmeal balls or something along that line, but we call them “courtship cookies.”  I made these for my betrothed before we were married, and he took a fancy to them.  Somewhere along the way they got labeled as courtship cookies and the name has stuck.  He stills feels a little extra special when he finds them in his lunch box.

We use natural peanut butter that contains nothing except peanuts.  The “nuts only” peanut butter, un-cooked oats and honey gives them plenty of protein and healthy ingredients.  I like them for breakfast, and they are also suitable for a snack or dessert.  Using gluten free oats makes it a good choice for gluten free friends.

Mix 2 cups of oats, ½ cup of peanut butter, ¼ cup of honey and ¼ cup of chocolate chips.  Once it is mixed well, roll it into balls.  That’s all there is to it!

If you have trouble rolling it into balls and it wants to crumble, add a bit more peanut butter or honey as necessary.

You can also make heart shaped courtship cookies.  Place a heart shaped cookie cutter onto a plate and firmly pack the peanut butter oat mixture into it, then gently pull the cookie cutter up off the cookie.

Maple syrup can be substituted for the honey.  You could even use corn syrup, but they would not be as tasty or healthy.  Store in an air-tight container.

Ingredients

  • 2 cups oats gluten free if needed
  • 1/2 cup peanut butter peanuts only
  • 1/4 cup honey
  • 1/4 cup chocolate chips

Instructions

  1. Mix the oats, peanut butter, honey and chocolate chips. Once it is mixed well, roll it into balls.


  2. If you have trouble rolling it into balls and it wants to crumble, add a bit more peanut butter or honey as necessary.
